Veggie Wraps Inspired by Vietnamese Salad Rolls

Hello my friends! Not sure if you have the same obsession as me about Vietnamese appetizers, however let me tell you that one of my favorites is Vietnamese Salad Rolls made with rice paper wraps. This past weekend my hubby and I were looking to eat something out of the ordinary for lunch. Inspired by this Recipe, we made the most delicious veggie wrap dipped in homemade Peanut Sauce. Instead of using crab meat as this recipe does, we kept it vegetarian with no meat. We also used a yellow pepper instead of red pepper simply due to what was in our fridge at the time.

Instead of mango dipping sauce we made this homemade Peanut Sauce, a recipe given to me by DS, a very dear friend of mine. Yummy, Yummy!!!!!!

How to make Homemade Peanut Sauce for dipping:

3 tbsp Peanut Butter

2 tbsp Hoisin Sauce

1 tsp Sugar

1 cup Water

Combine all of the above into a pot and simmer all ingredients. Stir for 10 minutes until melted. Remove from heat once sauce is moderately thickened. Refrigerate and serve. *Tip: we love spice, so we add a tsp of our favorite Asian hot sauce on top of the Peanut Sauce to add some extra kick.
